Smores Pie

Thanksgiving is all about indulgence. Who doesn’t love a large heaping of pie after you’ve stuffed yourself with turkey and all the trimmings. Pie is always a tradition in our family and this year we decided to whip up what we call Smores Meringue Pie. This pie has all the yummy bits of chocolate meringue pie, only stuffed on top of a graham cracker pie shell. Can you say yum?

 

Ingredients 

Filling

 

  • 2 1/2 tablespoons flour
  • 1 bag of semi sweet chocolate chips
  • 1/4 cup of cocoa powder
  • 1/4 teaspoon salt
  • 3/4 cup of granulated white sugar
  • 3 egg yolks
  • 1 2/3 cup of milk
  • 1/3 cup of heavy whipping cream
  • 2 teaspoons vanilla extract
  • 1 tablespoon butter

 

Meringue 

 

  • 3 egg whites
  • pinch of cream of tartar
  • 2 tablespoons of granulated white sugar

 

Graham Cracker Shell 

 

  • 1 pack of graham cracker crumbs (1 1/2 cups)
  • 1 stick of butter (melted)
  • 1/3 cup of white granulated sugar
  • 1/2 teaspoon of cinnamon

 

 

Preparation 

 

Filling

1. In a heat proof bowl combine sugar, cocoa powder, flour, and salt

2. Slowly mix in 1/3 cups of milk and the egg yolks until the mixture has reached a thick consistency, set aside

3. In a medium saucepan, add 1/3 cups of milk and 1/3 cups of heavy cream and bring to a boil

4. Remove from heat and temper with the cocoa mixture you set aside,

*temper means to slowly add into the mixture to avoid it from curdling

5.Bring back to the pot and boil until it becomes as thick as toothpaste, but as smooth as mayonaise

6. Strain into a bowl

7. Place plastic wrap directly onto the chocolate mixture ensuring a skin wont form

8. Place in the fridge for 4 hours or freezer for 2

 

Graham Cracker Crust 

1. In a bowl combine all the ingredients

2. On a pie plate, press into a crust

3. Bake at 375 F for 7-10 minutes

 

Meringue*

1. In a stand mixer, Beat the egg whites until foamy

2. Add in the cream of tartar while continuing to beat the eggs

3. Slowly add in the sugar to the eggs and beat until stiff peaks have formed

* Only make this when you are ready to assemble your pie

 

Assembling the pie 

1. Remove chocolate filling from the fridge

2. Pour onto the graham cracker crust

3. Spread until all of the pie is coated with the chocolate mixture

4. Scoop Meringue onto the pie

5. If you want you can make pretty designs with the meringue

6. Bake at 350 F for 10 minutes or until the meringue turns a golden brown
